paper self wrappers; Toned, else very good; Quite scarce; Oscar Tschirky 
(1866-1950) was maître d'hôtel of Delmonico's Restaurant and 
subsequently the Waldorf-Astoria Hotel in Manhattan, New York, United 
States. He was widely known as "Oscar of the Waldorf" and published a 
large cookbook.

Octavo;  pp; 64; Many hand written recipes ranging widely; Walnut Cake; 
Orange Cake; Cream Sponge Cake; Fruit Cake; Strawberry Morisse; Salad 
Dressing; Mrs. Elwells' Rule; Cream Cakes; Black Cherry Pie; Parker 
House Rolls; Brown Bread; Pudding Sauce; Chocolate Cake; Maple Sugar 
Sauce; Chocolate Souffle; Salem Pudding; Quaker Pound Cake; Ginger 
Bread; Indian Pudding; Beef Stew; Piccalilli; A number of recipes 
extracted from newspapers and affixed throughout. The blank book that 
houses this collection is clearly from the 1860's; The spine is worn 
off, the pages are loose, there are no identifying marks of ownership. 
Collectively there are more than 100 recipes at least. A vestige of 19th 
century cookery that is quite charming. When butter is called for in 
some recipes it is measured as such, "size of an egg" or 'size of a walnut".
