published by Thacker, Spink, and Co., of Calcutta, India. 1877. 8vo, pp. 
vi, 596.

"Containing numerous directions for plain wholesome cookery, both 
Oriental and English; with much miscellaneous matter, answering all 
general purposes of reference connected with household affairs likely to 
be immediately required by families, messes, and private individuals 
residing at the presidencies or out-stations." First published in 
Madras, in 1849, ostensibly as a cook book and household guide for the 
British civil servant, soldier, or family member assigned to a station 
in Hindustan (as India was sometimes then called). This is the eighth 
edition - revised.

The first chapter is particularly interesting: "Servants: their 
Description, Habits, Castes, Wages, &c., at Bombay, Bengal, Madras, and 
Hyderabad." Then follow 28 further chapters, the majority dealing with 
all aspects of the preparation, cooking, and storage of local fish, 
game, poultry, meat, fruit, vegetables, and dairy products. Chapter 
XXIII is on "Freezing Mixtures, with or without ice". This was a 
"working" book, and shows the expected wear and tear. The binding is 
intact, but is worn and soiled. There is a former owner's inscription on 
the front pastedown: "Lil Clement with her Mother's love Aug. 14th, 
1886, Hampsted (?)". The last page of the index is loose and has affixed 
to it some newspaper recipes. A recipe for smoked fish has been written 
out on the last free rear endpaper. The binding is sprung and one 
internal page is loose, due to stretched stitching, but otherwise the 
book is clean and intact. A scarce item, and a wonderful window into the 
culinary practices of the British Raj during the ninetenth century.
